Keto-ish Carrot Cake Recipe. This low carb carrot Keto-ish Carrot Cake Recipe. This low carb carrot cake is so moist and fluffy, you won't believe it is low-carb! Made with simple ingredients, it's an easy dessert that is sure to impress! Course: Dessert Cuisine: American Prep Time: 10 minutes Cook Time: 30 minutes Total Time: 40 minutes Servings: 12 Slices Calories: 195kcal Ingredients - 3 cups almond flour - 1 teaspoon baking powder - 1 teaspoon baking soda - 1/2 teaspoon cinnamon - 1/2 teaspoon nutmeg - 1/4 teaspoon salt - 5 large eggs - 1 1/2 cups granulated sweetener of choice I used keto brown sugar, but erythritol or monk fruit sweetener can be used - 1 teaspoon vanilla extract - 1/2 cup oil I used canola oil but any neutral flavored oil can be used. - 2 cups carrots shredded, approximately 3 large ones - 1/2 cup unsweetened shredded coconut - 1/2 cup apple shredded, approximately 1 large apple * See notes - 1/2 cup walnuts chopped - 1-2 cups cream cheese frosting Instructions Preheat the oven to 180C/350F. Grease two 8-inch cake pans with cooking spray and lightly dust it with almond flour. In a large mixing bowl, combine your almond flour, baking powder, baking soda, cinnamon, nutmeg and salt, and mix well. In a separate bowl, using a stick mixer, beat together the eggs and sweetener until smooth and almost double in size. Add in the vanilla extract. In a third bowl, whisk together the rest of the ingredients, until combined. Fold through the dry ingredients into the egg/sweetener/vanilla mixture, until just combined. Add the remaining ingredients and mix until fully incorporated. Distribute the cake batter amongst the two cake pans and bake for 30-35 minutes, or until a skewer comes out mostly clean. Let the cakes cool for 10 minutes, before carefully turning them on to a wire rack to cool completely. Once cool, layer and frost, before letting it sit for 30 minutes, before serving. Moist and juicy in the middle and crispy on the outside, this is a foolproof recipe. Course: Main Course Cuisine: American Prep Time: 1 minute Cook Time: 35 minutes Total Time: 36 minutes Servings: 6 chicken thighs Calories: 298kcal Ingredients - 6 chicken thighs bone-in and skin-on - 1/2 teaspoon salt - 1/2 teaspoon pepper - 3 tablespoons olive oil - 6 cloves garlic minced - 2 teaspoons smoked paprika - 1 teaspoon dried oregano - 1 teaspoon dried dill - 2 teaspoons honey - 1 small lemon zested Instructions Preheat the oven to 220C/428F. Lightly grease a baking dish. Season the chicken thighs with salt and pepper. Combine the olive oil, garlic cloves, paprika, oregano, dill, honey, and lemon zest in a small bowl. Place the chicken thighs in a baking pan and coat well with the marinade. Leave in the refrigerator for 30 minutes to chill, covered. Bake the chicken for 35-40 minutes until cooked through. TO STORE: Leftover baked chicken should be refrigerated and eaten within 3 to 4 days. Store them in an airtight container or wrapped in foil. TO FREEZE: Freezing bone-in chicken thighs is not the best idea. Instead, shred the baked chicken thighs before freezing them. Frozen baked chicken thighs will last up to 4 months in the freezer. TO REHEAT: Reheat chicken thighs in an oven preheated to 400F degrees for 15 minutes or until they are heated through. DIRECTIONS⁠ 1. Cook the bacon and warm up the cooked chicken. Then cut the 6 large lettuce leaves into square(ish) shapes.⁠ 2. Lay 2 lettuce leaves onto a plate and spread 1/2 of the mayonnaise onto it. Next lay the ham, chicken and cheese on top. Cover the meat with another 2 lettuce leaves and spread the other 1/2 of the mayonnaise on top of them.⁠ 3. Place the tomato slices and bacon on top of that. Cover with the last two lettuce slices, then poke 4 tooth picks or skewers into the middle of each of the corners. Slice the sandwich into 4, by slicing corner to corner.⁠ .
