This chicken dish is to die for – its very convenient and very filling. Who doesn’t love bacon, cheese and chicken! Get your correct macro nutrient breakdown with this dish of protein, fats and carbs. This is great dish to cook in bulk for the week. As it keeps well in the fridge and helps portioning your meals properly. Serves 6 Prep Time: 30 min Cook Time: 40 min Total Time: 1 hr 10 min Ingredients Ingredients for Cream Cheese Mixture 2 containers of Philadelphia cream cheese (2 x 500 gram containers) 2 cups grated old cheddar cheese 15-20 jalapeno peppers (I like to leave the seeds in to make it extra spicy but you can unseed the peppers and slice them up) Ingredients for Drumsticks 12 Drumsticks (You can do this with chicken thighs but I find it less time consuming with drumsticks) Pack of Low sodium Bacon (2 slices per drumstick) Salt and pepper to taste Instructions Preheat the oven to 400 degrees Season your drumsticks with salt and pepper on each side. Line your baking pan with aluminum foil and raise the edge (to prevent the grease from falling over and making a mess of your oven) Take a handful of of the cream cheese mixture and stack it on each drumstick Take a slice of bacon (I use 2 but your choice) and wrap it around the drumstick and the filling. Make sure it is all covered. Place each stuffed and wrapped drumstick on your baking pan Place baking pan in oven for 40 mins This chicken dish is great for keto’ers as is has the balance of protein and fats needed. Goes great with a side of greens or salad. NUTRITION: APPROX. PER FULL PREPARED DRUMSTICK Calories: 420 cals Fat: 37 grams Protein: 23 grams Carbs: 7 grams (Net Carbs: 4 grams) By Keto Chef Prav. Ready in less than 10 minutes, these are juicy, tender, and taste so fancy! Course: Main Course Cuisine: American Prep Time: 1 minute Cook Time: 5 minutes Total Time: 6 minutes Servings: 4 servings Calories: 95kcal Ingredients - 1/2 lb scallops - 1/2 teaspoon salt - 1/4 teaspoon pepper - 2 tablespoons butter divided - 1/4 cup parsley finely chopped - 1/2 small lemon sliced Instructions Pat dry the scallops and then sprinkle with salt and pepper. Brush one tablespoon of butter over the scallops. Generously grease an air fryer basket with cooking spray and add a single layer of scallops. Air fry at 200C/400 for 5-7 minutes, flipping halfway through. Remove them from the air fryer basket, and brush more butter on them. Sprinkle with finely chopped parsley and serve with sliced lemon. TO STORE: Place leftover scallops in a shallow container and store them in the refrigerator for up to two days. TO FREEZE: Once the scallops have cooled to room temperature, place them in a shallow container and store them in the freezer for up to two months. TO REHEAT: Reheat in the air fryer or microwave until warm. Reverse Sear Steak Keto Recipe. This reverse sear Reverse Sear Steak Keto Recipe. This reverse sear steak is the foolproof way of cooking thick steaks and yields the most gorgeous crust. Minimal prep is needed and perfectly cooked meat every single time. Course: Main Course Cuisine: American Prep Time: 2 minutes Cook Time: 30 minutes Total Time: 32 minutes Servings: 2 servings Calories: 349kcal Ingredients - 1 large rib eye steak 1 1/2 – 2 inches thick - 1 tablespoon olive oil - 1/2 teaspoon salt - 1/4 teaspoon cracked black pepper - 1/4 teaspoon smoked paprika - 1 bulb garlic halved - 1 tablespoon butter Instructions Preheat the oven to 135C/275F. Pat dry the steak then rub both sides with the salt, pepper, and smoked paprika. In a large skillet or cast iron, add the olive oil. Place the steak on top, followed by the garlic cloves. Bake in the oven for 30-35 minutes, or until it reaches an internal temperature of 130F. Remove the skillet from the oven and remove the steak and let it rest for 10-15 minutes. Add the butter to the skillet and place it over medium heat. Once hot, add the steak back and sear it for a minute on each side. Slice it up and serve immediately. TO STORE: Leftovers can be stored in the refrigerator, covered, for up to three days. TO FREEZE: Place the cooked and cooled steak in a heavy-duty ziplock bag and eat it within 6 months. TO REHEAT: The best way to reheat leftover steak is in the oven. Set the oven to 275 degrees and reheat the steak for around 4 minutes or until the internal temperature of the steak is 130F degrees. You can also reheat reverse sear steak in a skillet over low heat.
