Keto-ish Carrot Cake Recipe. This low carb carrot Keto-ish Carrot Cake Recipe. This low carb carrot cake is so moist and fluffy, you won't believe it is low-carb! Made with simple ingredients, it's an easy dessert that is sure to impress!

Ingredients
- 3 cups almond flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 5 large eggs
- 1 1/2 cups granulated sweetener of choice I used keto brown sugar, but erythritol or monk fruit sweetener can be used
- 1 teaspoon vanilla extract
- 1/2 cup oil I used canola oil but any neutral flavored oil can be used.
- 2 cups carrots shredded, approximately 3 large ones
- 1/2 cup unsweetened shredded coconut
- 1/2 cup apple shredded, approximately 1 large apple * See notes
- 1/2 cup walnuts chopped
- 1-2 cups cream cheese frosting

Instructions
Preheat the oven to 180C/350F. Grease two 8-inch cake pans with cooking spray and lightly dust it with almond flour.
In a large mixing bowl, combine your almond flour, baking powder, baking soda, cinnamon, nutmeg and salt, and mix well. In a separate bowl, using a stick mixer, beat together the eggs and sweetener until smooth and almost double in size. Add in the vanilla extract. In a third bowl, whisk together the rest of the ingredients, until combined.
Fold through the dry ingredients into the egg/sweetener/vanilla mixture, until just combined. Add the remaining ingredients and mix until fully incorporated.
Distribute the cake batter amongst the two cake pans and bake for 30-35 minutes, or until a skewer comes out mostly clean.
Let the cakes cool for 10 minutes, before carefully turning them on to a wire rack to cool completely. Once cool, layer and frost, before letting it sit for 30 minutes, before serving.

Ingredients
- 5 large eggs room temperature
- 1 cup coconut flour sifted
- 1/2 cup butter melted
- 1/2 cup water
- 1 tablespoon apple cider vinegar
- 1 teaspoon baking powder
- 2 tablespoons psyllium husks
- 1/4 teaspoon salt
- 1 large egg white
- 2 tablespoons sesame seeds

Instructions
Preheat the oven to 180C/350F and line a loaf pan with parchment paper.
Add the eggs into a mixing bowl and beat together until fluffy. Add the melted butter, water, and apple cider vinegar until combined.
Add the remaining ingredients and mix together until just combined.
Transfer the bread batter into the lined pan. Brush the top with egg white and sprinkle with sesame seeds. Bake for 30-35 minutes, or until a skewer comes out clean.
Remove the bread from the oven and let it cool completely.

TO STORE: Wrap the leftovers in parchment paper and refrigerate for up to 5 days. 
TO FREEZE: Slice your bread, wrap individual pieces in plastic, and then foil. Now it is ready to freeze for 3-4 months straight.

🍪🍫 Keto Chocolate Chip Mug Cake (Easy peasy desse 🍪🍫 Keto Chocolate Chip Mug Cake 
(Easy peasy dessert/ snack option for you!) 

🍪 Ingredients:
1 tbsp butter melted
1 large egg
3 tbsp almond flour
1/2 tsp baking powder
1 tbsp monk fruit or sugar replacement 
1/2 tsp vanilla
1 1/2 tbsp Lily’s dark chocolate chips

🍪 Directions:
In a microwave-safe mug, add all ingredients except chocolate chips. Mix with a small whisk until batter is smooth.
Sprinkle surface of batter with chocolate chips. You do not need to stir them into the batter as they will sink in as the batter cooks.
🍪 Cook the cake in microwave for about 1 minute and 30 seconds. #ketorecipes #ketodessert #ketolifestyle #ketofoods #dessert #lowcarb
